Ingredients for Garlic Butter Steak
- 300g premium ribeye or New York strip steak
- 3 tbsp unsalted butter
- 3 cloves garlic, crushed
- Fresh rosemary & thyme sprigs
- 1 tbsp olive oil (for searing)
- Fresh chives, finely chopped
Step-by-Step Cooking Instructions
- Bring the steak to room temperature for 20 minutes before cooking. Pat completely dry and season generously with coarse salt and cracked black pepper.
- Heat olive oil in a heavy cast-iron skillet over high heat until smoking.
- Sear the steak for 2-3 minutes on each side to develop a deep, golden crust.
- Turn the heat down to medium. Add the butter, garlic cloves, and fresh herbs to the skillet.
- Tilt the pan and continuously spoon the melted, foaming garlic-herb butter over the steak for another 2 minutes (basting).
- Remove the steak from the pan and let it rest for 5-7 minutes before slicing. Drizzle with the remaining pan butter and garnish with fresh chives.
