Ingredients for Braised Lamb Shanks
- 2 premium lamb shanks
- 1 large onion & 2 carrots, chopped
- 2 cups rich beef broth
- 3 tbsp tomato paste
- Fresh rosemary, thyme, and garlic
Step-by-Step Cooking Instructions
- Season lamb shanks generously with salt and pepper. Sear in a hot Dutch oven until browned on all sides, then remove.
- Sauté chopped onions, carrots, and celery in the same pot until soft. Stir in tomato paste and minced garlic.
- Pour in beef broth and return the lamb shanks to the pot, adding fresh rosemary and thyme.
- Cover tightly and braise at 160°C (325°F) for 2 to 2.5 hours until the meat is incredibly tender.
- Remove shanks, strain and simmer the liquid until it thickens into a glossy glaze, then pour over the lamb to serve.
