Ingredients for Pan-Seared Duck Breast
- 2 premium duck breasts
- 1/2 cup fresh orange juice & zest
- 2 tbsp balsamic vinegar & 1 tbsp honey
- Fresh rosemary sprig
- Salt and cracked black pepper
Step-by-Step Cooking Instructions
- Score the duck breast skin in a diamond pattern, being careful not to cut into the meat. Season both sides with salt and pepper.
- Place the duck breasts skin-side down in a cold, dry skillet. Turn heat to medium and cook for 8-10 minutes, allowing the fat to render completely and the skin to become ultra-crispy.
- Flip and cook the meat side for 3-4 minutes. Remove from pan and let it rest for 8 minutes before slicing.
- Pour off most of the duck fat, leaving 1 tbsp. Add orange juice, zest, balsamic vinegar, and honey to the pan. Simmer until it thickens into a glossy glaze.
